Whole-Wheat Bread

This week, we were trying on another one of the recipes from The Bread Baker's Apprentice: Mastering the Art of Extraordinary Bread book. The recipe on page 270 is called whole-wheat bread that used whole-wheat flour and some rye flour. Same as previous, this bread is baked in bread machine for one hour.

Here are the ingredients based on the book formula that we used.

Soaker:

  • 121g rye flour
  • 170g water

Poolish:

  • 192 whole-wheat flour
  • 170g water

Dough:

  • all soaker
  • all poolish
  • 256g whole-wheat flour
  • 10g salt
  • 4g instant yeast
  • 43g honey
  • 15g olive oil
  • 47g egg, lightly beaten
